Rice murukku is a crispy, savory snack from South India made from rice flour, urad dal flour, and spices. The name "murukku" comes from a Tamil word meaning "twisted" because the dough is shaped into a spiral. 

Ingredients 

  • Rice flour
  • Urad dal flour
  • Water
  • Salt
  • Red chili powder
  • Asafoetida
  • Sesame seeds or cumin seeds

Preparation 

Mix the flours, water, salt, chili powder, asafoetida, and seeds

Knead the mixture into a dough

Shape the dough into a spiral or coil

Deep-fry the shaped dough

Notes

  • Murukku is sometimes called "chakli", another savory snack, but chakli usually contains chickpea flour. 
  • Murukku is high in carbohydrates and calories, so it's best to eat it in small portions.
